Firefly Tapas Kitchen + Bar (Multiple Locations)

He and Fukuburger founder Colin Fukunaga are among those who mentioned Chef John Simmons’ 20-year-old local institution in our survey.
Simmons began his culinary journey as a dishwasher and prep cook when he was 15 years old. After moving to Las Vegas and working in some top local eateries, he knew it was time to open his own place. Firefly was envisioned as a hip, fun, casual restaurant with good food that could cater to industry folks wanting a place to unwind.
He's gone on top operate Firefly locations at various spots in the valley, with two currently open. This one is located just around the corner form the place where it all began.
Tapas options include chilled, hot, seafood, meat and poultry options. And the menu has been expanded to brunch, paella and desserts, along with vegetarian and gluten-free choices.
