Amador Cocina Fina
$ $After turning EDO into one of the best and most acclaimed restaurants in Las Vegas, Chef Oscar Amador decided to start over from scratch, revamping the space with a new look, new menu and new name: Amador Cocina Fina. The new restaurant continues to focus on shareable tapas and tasting menus, but detours from the chef's native Spanish cuisine (although not completely) in favor of Latin American flavors with subtle global touches.
Rob Kachelriess of City Cast Las Vegas praises Amador for "following his own vision" while Samantha Gemini Stevens of Food and Loathing News lists it as the best new opening of 2025.
Expect the menu to change frequently in this experimental incubator. Amador has been dry-aging seafood in house with great results, including a scallop sashimi and bluefin tuna ceviche. He also has fun with playful bites like a Japanese uni "carrot cake" with candied jalapenos. The Spanish influence is felt in the croquetas (reimagined with wagyu beef) and the occasional appearance of acorn-fed Iberico pork.
Much like EDO, the cocktails are thoughtful, especially the gin-and-tonic specials. And the house vermouth makes for a brilliant "Barcelona-style" Negroni variation.
Overall, you're getting exceptionally sourced ingredients, creative presentations and adventurous recipes that reflect a chef at the top of his game. Through it all, the food is always approachable and never pretentious.
