Noodlehead is a modest operation in a strip mall on the western edge of Chinatown, but it draws loyal fans, including local superstar chef James Trees, for slurping down a variety of authentic Chinese noodles.

Chef Ben Yang draws on his Szechuan heritage, adding a heavy dose of heat to many of the recipes, made with broths that simmer continuously for close to 24 hours to lock in the flavors. The Yibin Burning Noodle is a great example. Prepare to sweat. For something less aggressive, try the cold sweet and sour Mung Bean Noodles or the Beef Brisket Noodles with tender meat that falls apart easily with every bite.

Despite the name, Noodlehead has plenty of other dishes that command your attention too. Try a sliced beef roll as your appetizer, layered in onions and cilantro inside a burrito-like wrap. The Malaysian curry chicken rice is another robust option that pairs well with the crispy vegetable spring rolls. Come hungry and expect large portions.
