Palate
Palate is a modern American restaurant blending food, hospitality, art and culture in the heart of Las Vegas Arts District. It offers a large dining room adorned with the work of local artists, an open kitchen, a sitting area with a library of cookbooks that you can borrow, and a full bar. There's a tiny outdoor patio, and dogs are welcome.
This is a minority-owned and woman-owned business, with Rudy Aguas and Marisa Martino of Barkada Hospitality leading the front-of-house team. And Chef Sterling Buckley, a veteran local chef with experience at top Strip and off-Strip restaurants, blends culinary influences to create works of art on a plate.
Veteran Vegas food and entertainment writer Don Chareunsy says, "Buckley is doing exciting things in the modern American kitchen,” while local beverage wrier Bob Barnes declares the chef is “putting out an incredible blend of soul food from diverse cuisines.”
They’re talking about appetizers like “tiger style” scallops in coconut milk with kumquats and trout roe. Various charcuteries and tartare are served on boards shaped like artists’ palates. Main courses include scallops with black truffle grits bok choy and miso truffle sauce. And there are family-style large plates of pork, fish, steak and chicken.
Citycast Las Vegas’ Rob Kachelriess , entertainment journalist Stacey Gualandi and cookbook author Alicia Shevetone are also big fans.
