Chef Sam Marvin’s Tivoli Village spot is doing something unique in Las Vegas: offering a full-fledged butcher/restaurant combination. The butcher shop (with glass meat locker on full display) shares the first level space with the restaurant’s bar and sandwich counter. In a throwback to the friendly neighborhood shops of a bygone era, customers can interact with the team of classically-trained butchers who will guide them to the right choices.
At the steakhouse upstairs, the menu offers an extensive list of small plates, including grilled octopus with gigante beans and green olives. There are plentiful beef options, including tri-tip, hanger, NY, ribeye cap, wagyu filet tenderloin and skirt, along with Spencer — an old-school cut taken from the center of the ribeye. The butcher blend burger is made from USDA prime beef and accompanied with bibb lettuce, Brandywine tomato, aioli and red onion.
