The Butcher Block
Numerous local experts who participated in the Neon Feast survey mentioned The Butcher Block when asked to recommend a butcher, and it's no wonder. The shop, which was started by a former Strip-resort butcher who ventured out on his own, has gained in popularity to the point that it has three locations in Southern Nevada, spaced around the Las Vegas Valley.
Prime and choice beef from Nebraska and 1855 Black Angus cuts are among The Butcher Block’s mainstays, but the shops also carry Prime dry-aged beef, 15 Japanese kobe beef, Kurobuta Berkshire pork, Colorado lamb and veal.
There’s also seafood including Chilean seabass, ahi tuna and live blue crabs and oysters, and poultry varieties such as chicken and turkey are joined by the more interesting quail, partridge, pheasant and squab.
Looking for something a little more exotic? The Butcher Block’s butchers also carry and can provide advice on elk, venison, buffalo, alligator, turtle, rattlesnake, duck tongue and Rocky Mountain oysters. The shops carry rubs and salts, and special orders are welcomed.
