El Dorado Cantina Restaurant and Bar (Multiple Locations)
The stage is set the moment you walk through the doors at El Dorado Cantina’s Tivoli Village location: candles; a wall of red roses; plush red couches. And the vibe here is as important as the excellent, health-conscious cuisine. Those roses also appear in the elegant main dining room, along with upholstered black leather booths and festive butterfly light fixtures. The large bar area is a bit more laid back, but still stylish, and boasts an impressive collection of spirits (including about 50 different tequilas and mezcals).
The regional Mexican menu stresses organic and non-GMO ingredients, and a promise no seed oils. House specialties include grilled mahi, chile rellenos and a cedar plank salmon, while street and signature tacos, enchiladas, taquitos, queso fundido, fajitas and a trio of bowls round out the menu. Desserts include caramel-filled churros. Fans include content creators Lindsay Stewart (@thelasvegasfoodie) and Emily Romero (@eatmelasvegas), journalist Melinda Sheckells and Chef James Trees.
Open 24 hours, El Dorado fills a niche for serious late-night dining on the edge of Summerlin. It’s also great for large parties, thanks to a large outdoor patio that opens most weekends, and a second two-story building on the other side of that courtyard which is reserved for special occasions and private events.
