High Steaks Vegas

After conquering the local neighborhood dining scene with restaurants like Esther's Kitchen and Al Solito Posto, chef and operator James Trees takes direct aim at the tourist market with High Steaks Vegas. True to its name, the restaurant sits at the top of the Rio, soaking in the scenery with panoramic views of the Strip.

Gemini Stevens of Food and Loathing News, Emily Romero (@EatMeLasVegas), Dayna Roselli of Vegas Revealed, Hell's Kitchen winner Ellie Parker and Scott Roeben of Vital Vegas all rave about the food and atmosphere. Food blogger LeAnne Notabartolo goes one step further, saying “High Steaks has the best view of the city.”

Steak connoisseurs will love the sourcing of traditional favorites, from a lean Niman Ranch filet to the rich marbling of an Australian wagyu ribeye. But the big surprise is the wild game selection, which includes bison, elk, boar and venison. Some of their trimmings are mixed together in a wild game tartare appetizer. And in a fun twist, Trees grills a large lion's mane mushroom, soaked in beet juice and spices, for a vegan-friendly "lion" cut.

The rest of the menu is rounded out with old school touches, from cocktail classics done right to a lightly breaded crabcake and a spin on a Seafood Louie salad, served with lettuce cups. Take a break between courses and bring your drink (and date) onto the patio for open-air, front-row views of Vegas in all its neon glory.
