Pisces

When asked for her favorite restaurant opening of the year, chef/journalist Lorraine Blanco Moss didn’t hesitate with her answer: Pisces in Wynn Las Vegas. And she’s certainly not the restaurant’s only fan.

With sweeping views of Wynn’s Lake of Dreams, Pisces feels like a trip to Atlantis. Every detail stands out, from the intricate oceanic textile art to the yachtsman chairs covered in fish skin leather. The menu highlights fresh fish flown in daily from the Mediterranean.

Before anything else arrives, Pisces makes an impression with its bread service—a laminated sourdough that pulls apart into five barnacle-shaped pieces. Other standouts include the Fisherman's Stew, a bouillabaisse-style dish packed with lobster, king crab, scallops, shrimp, mussels, clams, and fish.

As for the Siren's Offering seafood platter -- it might seem like only a siren song could convince guests to drop $1,000 (even if it features a jaw-dropping list of luxurious items like aged Kaluga royal caviar). But this is Wynn, where people are happy to pay for luxury. So there are plenty of takers.

For dessert, the playful If Wishes Were Fishes arrives as a show: warm fudge sauce melts the surrounding white chocolate bones, revealing a salted caramel ganache layer cake inside.
