After starting with a pretzel bread loaf (and definitely some short rib ravioli top with parmesan and crispy horseradish), the melt-in-your-mouth yellowfin tuna tartare pairs not only with a crisp bottle of white wine from the colossal wine list, but the views of Wynn’s Lake of Dreams from a luxurious patio space. Executive chef Mark LoRusso keeps an international selection of meats at the ready, from A5 wagyu to domestic cuts -- meaning you can do no wrong in the mains department. (We recommend adding diver sea scallops with fennel puree, blood orange, citrus vinaigrette, and pistachio to any and all cuts).

One under-recognized element of all legendary steakhouses is the side dishes. Di Cicco broccoli with chili flakes and a twinging red wine vinaigrette offer bright twists on the side of a creamy, rich mac and cheese prepared with white cheddar, fontina and Gruyère.
