Esquire magazine's 2015 Chef of the Year Ray Garcia made a name for himself in Los Angeles with his restaurants Broken Spanish and B.S. Taqueria. At Resorts World, he offers a lively take on Mexican cuisine that's reflected in the colorful murals and the wood and rope accents that adorn the dining rooms.

The seasonal dinner menu here is compact and focused. They offer a handful of expected appetizers (think guac, taquitos, queso fundido), and a pair of simple salads. Things get more interesting in the crudo section, which draws on the flavors of both South and Central America.

Entrees include multiple spins on both enchiladas and fajitas, as well as steak or shrimp tacos, quesabirria and bacon-wrapped shrimp. And the "Platos Especiales" include steak, barbacoa, various fish, and a signature chicharron that's been featured on the Food Network.

Viva! is also open for lunch and/or brunch, seven days a week, with morning options like chilaquiles and Tres Leches French Toast added to the offerings.

The food at Viva! is extremely thoughtful. The atmosphere, however, is lively with a party vibe. And there’s a fantastic outdoor patio overlooking The Strip, where they sometimes hold special events, including Latin nights with live music and dance lessons.
