Echo & Rig (Multiple Locations)
Given the immense popularity of the original Echo & Rig, an expansion into Henderson was a logical step. Bravo to chef/owner Sam Marvin for waiting until this prime piece of real estate in The District became available, and then taking the time to not simply replicate, but also improve on, the concept.
All of the basics are still in place: a variety of meticulously sourced beef; manageable portions that result in manageable prices; weekday lunch and weekend brunch menus; an in-house butcher shop to supply backyard grillers; outdoor patio space; and those mouthwatering burgers and portobello fires. But Marvin also used the launch of this restaurant to make some upgrades.
The main beef menu (laid out in a grid) offers two to four different cuts of steak from each of five different ranches. Additionally, bone-in cuts of porterhouse, tomahawk, T-bone and New York Stirp can be ordered by the ounce. There are a handful of only-in-Henderson options, including Iberico pork secreto (with garlic pea tendrils and pineapple jalapeno jam). And the state-of-the-art circular bar offers cocktails created by bartending legend Tony Abou-Ganim. All of this is delivered by a first-rate staff, happy to walk newcomers through the menu to assure they getting exactly what they crave.
