Paletas – Mexican frozen fresh-fruit bars – are available all over the Las Vegas Valley. But few do them to the standard of The Paleta Bar. They’re made in-house here, and the Albuquerque-based company also offers dips and toppings and fresh-fruit adornments to really gild the lily. You start with a paleta flavor such as the conventional mango, lime, strawberry or coconut or the less-expected bubblegum, pecan, coffee or hazelnut crunch. Then you decide to get it fully dipped or half-dipped in dark, white or milk chocolate, or powdered chili and chamoy.
Toppings are next. Will you go with the sprinkles, M&M’s, Oreos or coconut? Or maybe get a little more daring, with pinon, pecans or pistachios? Then finish it up with your choice of strawberries, banana, pineapple, watermelon or mango – or cucumber, for an offbeat touch.
The Paleta Bar says the most popular combinations are Almond Joy (almond paleta with dark chocolate and coconut topping), Magic (taro paleta with white chocolate and Fruity Pebbles) and strawberry cheesecake (strawberry cream cheese paleta with white chocolate and graham crackers).
