00 Pie & Pub
Michael Vakneen, the award-winning chef behind Pop Up Pizza at the Plaza, is taking things up a notch with 00 Pie & Pub in Chinatown. While the image and atmosphere of the cozy restaurant takes inspiration from Japanese izakayas, the food is an elevated play on seasonal Italian with "some of the best pizza you'll ever try in Las Vegas," according to Rob Kachelriess of Thrillist.
Vakneen calls his style "progressive Neapolitan," with greater rise in the crust and a more consistent texture. The pies are cooked at high-temperatures in a wood-fired oven, producing a welcome char in the crust. Stay simple with a classic Margherita or load up the toppings with other intriguing recipes. The "Funghi" makes good use of mushrooms, garlic butter, and green onions over a savory white sauce.
Rob Moore of Brezza and Gary LaMorte of Honest Hospitality both named 00 (pronounced "double zero," after the quality of flour used) their favorite pizza, while James Trees of Esther's Kitchen (another great place for pizza in its own right) called it one of the best new restaurants to open in 2023.
The menu is rounded out by a robust antipasti selection (enhanced by an in-house pickling program), salads, deserts, cocktails and a nice selection of Japanese whisky.
