Lardo
It's easy to see why Lardo was listed in our survey as having one of the best sandwiches in Las Vegas. The quick-serve counter was originally a food cart in Portland, before becoming a full-fledged restaurant and later arriving in Las Vegas as one of several concepts at the Block 16 Urban Food Hall at the Cosmopolitan.
Porchetta is the specialty – a seasoned boneless pork roast that's cut on the spot for a moist, flavorful filling inside an overstuffed sandwich. It may take a few minutes, but this isn't fast food. Chef and founder Rick Gencarelli was extremely particular about getting every ingredient just right, especially the bread, which took in-depth research and testing before opening day.
The menu also includes a Korean-style pork shoulder sandwich, a bacon double-cheeseburger and a spicy grilled cheese. Ask for some Dirty Fries on the side (smothered in peppers and pork) and wash it all down with one of two Portland craft beers on tap.
