The local incarnation of New York City’s Carbone, located within Aria’s second-floor dining enclave, wowed our experts with its combination of elevated Italian-American classics, throwback VIP service and one of the most visually stunning dining rooms on Las Vegas Boulevard.

The lush main room, inspired by the Milan Opera House, is centered around a floor-to-ceiling Murano Glass Crystal Chandelier that was originally commissioned for a Ferrari showroom in the 1960s. It’s centered above a collection of outward-facing booths that are perfect for guests who like to see and be seen. Those craving privacy will find it in the “opera box” booths around the perimeter of the room, each of which features its own more modest chandelier, and curtains that can be drawn to avoid prying eyes. It's no wonder this restaurant resonates with those who appreciate a gorgeous photo; three Instagrammers on our list of experts named Carbone one of their favorite Italian restaurants, while another (@jayteetakesabite) named it a favorite "big splurge."

The menu elevates red sauce favorites from “back East” with pristine ingredients, and delivers them with old-school fine-dining flair, many with tableside preparations. “The eggplant parm is incredible,” raves Dayna Roselli, longtime Las Vegas journalist and co-host of the Vegas Revealed podcast.
