That’s what Las Vegas food writer Al Mancini has to say about Kassi Beach House, Virgin’s indoor-outdoor Mediterranean restaurant by Nicholas Mathers (creator of Santa Monica’s Elephante, The Eveleigh in West Hollywood and Ruby’s in New York’s West Village). Like many, he was impressed with the way the restaurant effortlessly shifts from a casual poolside brunch spot into a DJ-fueled evening party. Perhaps more surprising is how well the team executes a diverse menu that ranges from pizzas, pastas and burgers to crudo and caviar service.
