Celebrity chefs Susan Feniger and Mary Sue Milliken go beyond their Mexican roots with this Allegiant Stadium concept, which focuses on freshly seared skewers a la plancha with bold, globally inspired sauces and accompaniments.
Choices include chicken with coconut rice, Caribbean bean salad and jerk BBQ sauce; al pastor pork belly with chimichurri rice, charred pineapple, aji panca glaze and salsa verde; and lomo saltado, pairing beef tenderloin with onion, tomato, garlic, peppers, crispy potatoes and Peruvian sauce.
Pacha Mamas is one of three Feniger and Milliken concepts inside Allegiant Stadium, along with Border Grill and BBQ Mexicana.
