Take It Easy Roasters
Josh Molina set the tone for the Arts District and coffee bars in Las Vegas -- together and separately -- with Makers & Finders, then followed it up with Take It Easy, which he envisioned as the antithesis of that bustling spot.
The coffee roaster and Colombian bakery offers a number of things that are unique in Las Vegas, in particular the pandebono, with cotija and queso fresco; almojabana, with queso fresco and feta; pan con queso, with queso fresco and mozzarella; and the made-to-order bunuelos with cotija.
Sweet treats from other cultures are available as well, such as the 24K Matcha Cake, carrot cake doughnut or fresh-fruit tart. Empanadas are available in sweet, savory and vegan varieties.
The fun doesn’t stop there, however. Yes, Take It Easy has the customary cappuccino, nitro, cortado and the like. But have you tried the Somewhere in Kentucky? For that one, fresh mint leaves, sugar cubes and lime are muddled with vanilla and finished with tonic, seltzer and two shots of espresso. Or consider the vegan Shake n’ Bake, which is housemade coconut-cashew milk sweetened with lavender-infused simple syrup, shaken with two shots of espresso and finished with a cocoa-sugar rim.
