Parsley Modern Mediterranean (Multiple Locations)
Parsley’s Israeli-born owner came to Las Vegas via Los Angeles, where he honed his skills at his family’s Mediterranean restaurant, which specialized in the street food of their homeland. Now, he has three restaurants across the Las Vegas Valley.
They feature a four-step “experience.” First, choose a protein from among chicken shawarma, schnitzel or shish kabob, steak shawarma or beef kabob or falafel, Mediterranean tuna or veggie. You can get that plated, as a wrap, salad or baguette or in a basmati bowl. Then you choose the toppings (vegetables, chickpeas or parsley) and hot sauce or a dressing such as tzatziki or tahini, and you’re good to go.
If you’d rather, you can opt for one of the Parsley house favorites such as chicken curry, in which marinated chicken, onions and vegetables are simmered in a curry cream sauce infused with coconut milk and garlic, served on basmati rice with pita. Or maybe Parsley Shawarma Nachos, in which chicken or steak shawarma is arranged on house-made pita chips and topped with tomatoes, cucumbers, sumac onions, tzatziki, feta and parsley.
And be sure to indulge in the mezze bar, with a selection including hummus, baba ganoush, tabouli and grape leaves.
