In other words, they make chocolate from scratch right on The Strip, starting with cacao beans sourced from the best farms around the world and organic palm sugar. You can watch the chocolatiers in action as you decide on which equatorial nation's beans you want to sample.

The hand-crafted chocolates aren’t the only reason to visit, however. The attached restaurant offers a mix of cuisines in its salads, sandwiches, pastas and seafood. The dinner menu includes calamari served with rock shrimp and sriracha aïoli, hummus with crispy chickpeas za’atar and cavatelli Bolognese with braised short rib ragu. Brunch, served daily from 8 a.m.-3 p.m., offers the dessert-like cinnaroll waffle with cream cheese frosting, blueberries, raspberries and candied pecans.
